South Indian Filter Coffee
Coffee as a daily ritual: a strong decoction, hot milk, and a tumbler and davara.
South Indian filter coffee is a way of making and serving coffee rather than a single coffee. In the practice described by the sources, hot water is poured through ground coffee in a filter to make a decoction, which is then combined with hot milk and, if taken, sugar. Households differ on the details. Accounts describe the first decoction as the strongest, a weaker second decoction, and in many homes the addition of chicory, which makes the coffee thicker and more bitter.
It is traditionally served in a tumbler set in a davara, also spelled dabara, historically of brass and now mostly of stainless steel. The drink goes by several names, among them filter coffee, filter kaapi, Mysore filter coffee, degree coffee and Kumbakonam degree coffee.
The origin of “degree” is not settled. One explanation says it comes from the lactometer readings used to test milk in co-operative dairies in the Cauvery delta, mistaken by drinkers for a thermometer. Another ties it to the first, second and third decoctions. A Chennai food historian argues instead that it measures the quality and purity of the milk. The link to Kumbakonam is one historian’s explanation, not an established fact, and the sources describe the broader origin stories of filter coffee as folklore.
The culture around it is better documented than its beginnings. The Tamil historian A. R. Venkatachalapathy describes early worry that coffee would encourage westernised habits, and the writer R. K. Narayan, in an essay, recalls his mother’s exacting standards for making it.
